Lemon Poppyseed Cake |
| Ingredients and Instructions: |
1-10.5 oz. package silken soft tofu
3/4 cup water
1/2 cup Nantucket Nectars Lemonade
1/2 cup canola oil
1 tsp pure vanilla extract
2 cups unbleached flour
1 3/4 cups sugar
1/2 TBSP baking soda
1/2 tsp salt
2 TBSP poppyseeds
Preheat oven to 325 degrees Farenheit. Add tofu, water, lemonade, oil, and vanilla in a blender or food processor and mix until smooth & creamy. Transfer into a large bowl. In another bowl, sift together flour, sugar, soda, and salt. Add dry to wet, blending continuously with an electric mixer. Fold in the poppyseeds and pour into a greased round cake pan. Bake 35-40 minutes or until a tooth pick inserted into the center comes out clean. Great frosted or plain, but allow to cool completely before frosting. |
